Jan I did a search for Easy Squash Casserole. There are some others listed. I found this one that looks easy enough to make:

http://www.cooks.com/recipe/932zj7j4...casserole.html

EASY SQUASH CASSEROLE
2 c. yellow squash, chopped
1 c. grated cheese
2 eggs
1/2 c. milk
1/4 c. melted butter
1 med. onion, chopped
14 Ritz crackers
Salt and pepper to taste

Cook onion and squash until tender and drain. Add milk and beaten egg to squash and onion mixture. Mix cheese, butter, and 7 crushed Ritz crackers and add to mixture. Add salt and pepper. Pour into buttered casserole dish. Sprinkle other 7 crushed Ritz crackers on top. Bake at 400 degrees for 20 to 30 minutes.

There are some more listed here: http://www.cooks.com/rec/search/0,1-...serole,FF.html

Sorry I didn't see this sooner Jan. I cook it the way my aunt made it for me many years ago.

She just cut the squash in half, scooped out the seeds, add butter, brown sugar according to taste, seasoning (I use salt, pepper, and nutmeg), have also used sausage with sage, or bacon, and any other seasoning (fresh parsley, chives, basil, etc.) that you like. I either put it in a dish and cover with foil or bake in casserole dish.
